<description>&lt;p&gt;It came to my attention that Tennis Biscuits are not available in the UK!!&amp;nbsp; Shocker, I had no idea!&amp;nbsp; Who has never had / or heard of Tennis biscuits before?&amp;nbsp; Its interesting, I always thought the stuff in the shops was not that different overseas - does anyone else know of oother things that we in SA can&amp;#39;t get / or vice versa?.........&amp;nbsp;&lt;/p&gt;&lt;p&gt;Bakers Tennis Biscuits&lt;/p&gt;&lt;strong&gt;Wednesday 17 Mar 2004&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;&lt;img src=&quot;http://www.nicecupofteaandasitdown.com/biscuits/media/tennis.jpg&quot; border=&quot;0&quot; /&gt;Well it&amp;#39;s St Patricks day today and the Wife being Irish has had us up since the crack of dawn listening to Danny Boy and the like on every CD player and MP3 capable device here at NiceCupOfTeaAndASitDown HQ. The younger members of staff have luckily escaped to their day release facility, especially after they committed heresy by saying they preferred my dodgy old music collection. So we don&amp;#39;t actually have an Irish biscuit for you today but we have the next best thing, a biscuit hunted down for us by a nice Irish lady called Gail. No doubt there is some connection between South Africa and Ireland that I&amp;#39;m not aware of, but as half the planet seems to be Irish on St Patricks day we can probably make it stick. &lt;p&gt;Tennis Biscuits are apparently South Africa&amp;#39;s favourite biscuit, at least that&amp;#39;s what the packet says. I nearly had my hands on them once before, as my South African operative Nick brought a pack for us to sample. Alas his girlfriend ate them, which was our loss, but illustrates that are obviously quite desirable. &lt;/p&gt;&lt;p&gt;Once again made by leading South African manufacturer Bakers, as have all the SA biscuits we have tried. The Tennis biscuit is a light crispy little item which is possibly like a cross between a good butter biscuit such as the Galette Bretonne, with a dash of syrup and a well balanced coconut flavour. It&amp;#39;s refreshingly square, which is actually not a common shape for biscuits, and has some frilly petal like patterns all around its dockers, (the little holes that let the steam out). Occasionally you come across a small fleck of coconut, and by rights I shouldn&amp;#39;t like them at all. However, my tastes must be changing as these are really very good. &lt;/p&gt;&lt;p&gt;We fairly demolished half a pack with the younger members of staff monopolising Wifey&amp;#39;s mug of tea for dunking purposes, so much so that she had to get herself a second one. These are also the sort of biscuit that finds itself being broken up in its native South Africa to make &amp;#39;fridge tarts&amp;#39;. &lt;/p&gt;&lt;p&gt;Now to the obvious part as to why they are called called Tennis biscuits? I don&amp;#39;t know. There seems nothing about them to connect them with the sport other than the obvious assumption that: &lt;/p&gt;&lt;p&gt;a) They needed a name and &amp;#39;Tennis&amp;#39; hadn&amp;#39;t been used for biscuits up to that point. &lt;/p&gt;&lt;p&gt;b) People playing tennis might have eaten them before during or after a match, probably with a nice cup of tea or even a cold drink. &lt;/p&gt;&lt;p&gt;I&amp;#39;m sure if you know you&amp;#39;ll tell us. &lt;/p&gt;</description>

<description>&lt;div&gt;Ingredients:&lt;/div&gt; &lt;div&gt;&amp;nbsp;&lt;/div&gt; &lt;div&gt;2 slabs of dark cooking chocolate&lt;/div&gt; &lt;div&gt;1 slab of white cooking chocolate&lt;/div&gt; &lt;div&gt;3 tubs of fresh cream&lt;/div&gt; &lt;div&gt;tennis biscuits&lt;/div&gt; &lt;div&gt;&amp;nbsp;&lt;/div&gt; &lt;div&gt;Melt the dark chocolate over a bowl of boiling  water making sure that no water touches the chocolate. When completely melted  add 1 tub of fresh cream and stir like crazy. The mixture will get stiff at  first but if you keep strring it will relax and become very runny and glossy.  Crush up the tennis biscuits and add them to this mix. Allow to cool. When the  dark chocolate is cool and a little firm, melt the white chocolate over a bowl  of water. When completely melted add 1 tub of fresh cream and stir like mad.  When completely mixed pour on top of dark chocolate therefore creating two  layers. Allow to cool and then stick it in the fridge to hardened. When it has  set, whip the last tub of fresh cream and top off your pudding. You can crumble  a flake over but I don&amp;#39;t since the pudding is pretty rich on its  own.&lt;/div&gt; &lt;div&gt;&amp;nbsp;&lt;/div&gt; &lt;div&gt;The good thing about this pudding is that even if  it doesn&amp;#39;t set, it&amp;#39;s still very much edible. Have fun.&lt;/div&gt;</description>
