Make use of marinades
BBQs can be made just that little bit more special if your marinades are done perfectly.
1. When cooking red meats, try a marinade of olive oil and garlic, mixed with cracked black pepper and sea salt.
2. With chicken, mix some honey and lemon with thyme and fresh herbs. Marinate your chicken for at least an hour before cooking to give the flavours time to sink in.
3. Oils lock in the natural flavour and moisture of foods. Olive, walnut and sesame oil are great for adding flavour but remember to check if your friends have any allergies before using.
4. Acids help break down the tissue in your joints to allow the flavours to penetrate the meet further. This is particularly useful for tenderising tougher cuts of meat.
5. Be careful not to over marinate delicate dishes such as fish, as these can become unpalatable.
6. Citrus based marinades are superb with fatty meats such as duck, adding a fresh flavour to the dish.
7. Seasonings such as salt and pepper, fresh herbs, spices, chilli, garlic and so on can add spectacular flavour profiles to your food.
8. Select seasonings that are complementary to your food e.g. Rosemary with lamb, dill for chicken and even cinnamon for pork.
9. Other useful marinade ingredients you can find in your cupboard are honey, mustard, sugar, thick-cut marmalade and tomato ketchup.
10. Marinate your vegetables as well for extra flavour at your BBQ.

12. Try making bbq sauce from tomato sauce, honey, soy sauce and oil
13. For the best flavour, marinate the meat or poultry before it hits the grill. Give them at least 20 minutes to start working or overnight if possible.
Other tips
14. Stock the fridge with enough Carlsberg Export to go around. Get some Carlsberg as well to suit everybody’s tastes.
15. Brush the grill with olive oil before you start cooking to get authentic BBQ markings on your steak.
