Top BBQ tips

There’s nothing better than enjoying a summer BBQ with an ice cold Carlsberg. That’s why we’ve teamed up with top TV chef Jean-Christophe Novelli to give you some great tips and advice so you can host the best BBQ this summer.

1. Remember to clean your grill before you start to make sure the natural flavours from the meats and marinades come through to perfection.

2. Let meat reach room temperature before beginning to cook to ensure it is in the best condition for the BBQ.

3. Pre-heat your BBQ before you start to cook. The grill should be hot as the meat hits the BBQ.

4. Be patient, if using a charcoal BBQ, wait until the coals are white and glowing, rather than on fire before you begin cooking. If the coals are still burning, your food will too.

5. Cook any vegetarian dishes first to make sure they don’t interact with any juice from your meat or poultry or leave an area of the grill exclusively for vegetarian food.

6. Wash meat before cooking it to remove any outside odours; this will also help pick up the seasoning you apply.

7. Where possible, marinate your meat a few hours before you cook to allow time for the flavours to sink in to the meat itself. Preferably allow 24 hours for the marinade to sink in.

8. When cooking, don’t be tempted to turn the joints continually. Unless the recipe specifies, it will cook just as well if turning once and you run less risk of damaging the joint.

9. When cooking chicken, rub some light olive oil over its skin to prevent it from drying out.

10. Fat shrinks when cooking, causing some meat to curl. Prevent this by trimming excess fat off with a knife.

11. Don’t be tempted to use knives or forks when cooking your food. The meat will lose its natural juices and flavour if pierced and will begin to dry. Use tongs and spatulas to turn the meat to check how well cooked it is.

12. Cook steaks and pork joints over a medium heat to prevent burning; cut off any charred areas of your meat and discard.

13. Prepare some ice buckets to fill with Carlsberg and Carlsberg Export. That way your guests can enjoy a refreshing lager without having to go to the fridge.

14. Keep some ice water on hand to make sure your guests stay hydrated throughout the afternoon.

15. Grill some vegetables to accompany your BBQ. Cut up your vegetables and lightly coat these with a light olive oil to protect from burning. Then sprinkle with your favourite seasonings such as rosemary, garlic or pepper.

16. Fillet steaks are thicker than sirloin or rump and need an extra 1 or 2 minutes on the grill.

17. Learn to judge how well cooked your steaks are by touch. A well done steak will be firm to touch whereas a raw steak will feel soft to the touch. Check out our table to the right to see how long your meat should cook for.

18. For the perfect burger, heat first in a pan or on a flat griddle and then transfer to the grill to finish.

Marinades


1. Marinades are great for adding flavour to your meat. You can prepare your own with a mixture of 3 basic parts: 1 part cooking oil, 1 part acid (such as vinegar) and some spices/herbs.

2. Use the same amount of oil and vinegar, maybe ½ cup of each. Blend the oil and vinegar together in small quantities.

3. Then experiment with adding spices such as salt, sugar, garlic, or mustard.

4. Don’t overpower the marinade with spices though, make sure the meats natural flavours and BBQ taste come through.

Medium Rare 3 minutes each side
Medium 3 ½ minutes each side
Medium Well 4 ½ minutes each side
Well 5 minutes each side
